I first made this chocolate “cake” for my birthday last year. I didn’t have very high hopes of it being a success, or even being edible for that matter… Especially based on some of the “unusual” ingredients in it.
Black beans… seriously? But I gave it the benefit of the doubt and holy moly!! It was one of the best and healthiest cakes I’ve ever had on my birthday!!
It’s now my go-to “cake topper” for my kids birthday party cakes. I’ll make this healthier less-sugar, less-refined version for my kids and whoever else wants. Then I put it on top (or in this case, in the one corner) of the main traditional cake, and that way everyone is taken care of; gluten-free, less-sugar or otherwise.
