Parenting is all about small wins. Little daily conquests that make you feel like you’re not doing such a bad job after all. For me the best way to get my kicks is to sneak all manner of healthy stuff into what my kids eat/paint on the walls. But as small as they might be, they are wily little creatures that can sniff out even the faintest whiff of a veggie. So this is where I deviously bamboozle them with decadent treats laced with all things healthy. And my favourite way to do this is to enthusiastically announce “Who wants CHOCOLATE MOUSSE for pudding!?” With every greedy over-sized spoonful they guzzle down I smile smugly as only a tired mom can, knowing she’s unsuspectingly snuck in some superfoods.
Avo Chocolate Mousse
2 ripe avocados
2 ripe bananas
½ cup fresh cream (or coconut cream for a dairy substitute)
4 tbl cocoa powder
4 Tbl melted coconut oil
2 Tbl honey
– Add all ingredients into a blender and blend until smooth.
– Can be served immediately, but for best results refrigerate.
